SO WHAT JONAH CRAB IS AND WHY YOU'VE NEVER HEARD OF THEM?....

Crabs live all over the world, and the number of crab species in existence reaches about 4500.
Those that are edible have strong followings all over the world such as the Stone Crab, Dungeness Crab, King Crab, and Blue Crab.

HERE IN NEW ENGLAND, WE FOCUS ON THE JONAH CRAB!

Jonah crab, also known as Rock crab, is one of the sweetest in the crab family. Its flavor is sweet like Pacific Dungeness crab with the firm yet delicate texture of the Florida Stone Crab.

Often compared to Dungeness and Stone crab, Jonah crabs are unique and delicious in their own right.
Their thick, meaty claws have a distinct sweet flavor and are easy prepare, making them a great option for crab lovers looking for a more affordable price tag.

What is special about the Jonah is that the meat can be displayed and processed in many ways. Jonah crab can be used in almost any recipe that calls for crab meat, including soups, stews, dips, stuffings and crab puffs and cakes, you name it…

COLD CLEAR WATER SEAFOOD IS THE MOST SOUGHT AFTER SEAFOOD.
Cold water crab, be it Jonah crab, Dungeness crab, King crab or Snow crab are the most sought after species of crab in the world.
The main reason for this, is that cold water species grow slower, therefore the meat is firmer. And the firmer the meat, the more flavor and sugar it retains.
This is why Maine Lobster is known for its firmness and sweetness, while the Florida Spine Lobster isn't. And Jonah Crab is no different!

The body meat is very tender and sugar sweet yet the legs are slightly firmer due to the activity of the crabs legs.
Jonah crab claws are fairly meat dense and are great for sharing.
You get meat not only from their claws and legs but also form the body itself! It’s white, flaky and super sweet! The body meat is perfect for crab cakes!

Jonah Crab is most commonly enjoyed simply boiled or steamed, and dipped in a butter sauce, yet the versatility of this crab is massive. You can incorporate crab into a sandwich, a soup, a sushi roll, or a salad etc.

WHY HAVE SO MANY FOLKS NEVER HEARD OF JONAH CRABS?! Well, the answer is amazingly simple:
Jonah crabs are only caught in the canyons East of Cape Cod, along the New England Coast and up to the Canadian Maritimes.
That’s it!

Unlike lobsters that can be shipped LIVE all over the world, nearly every single crab species cannot.
Even here locally in New England, unless you know a lobsterman personally, you're not likely to find Jonah Crab live anywhere!
